No machine. No button. A cloth sock and a kettle, the way it's been done for fifty years.

Bread over charcoal, not a toaster. Cold butter in a slab so it doesn't melt away, kaya made every Sunday. Two eggs, dark soy, white pepper. From 5.30am until the bread runs out — usually around eleven.

Fifty-two years
on the same block.

The stall opened when the block did. The urn is older than most of the people queueing at it, and the sock gets replaced about once a month — any sooner and the coffee tastes thin.

Nothing here is artisanal. It's just been made the same way, at the same hour, for long enough that people notice when it isn't.
